Over the past week, Chartwells celebrated local farmers with the program " It Takes You - Eat Local." Throughout the whole week, Chartwells featured locally grown produce, defined as produce grown within a 150 mile radius, at Resident Halls and the Havener Center Station, Home Off the Range.
The week kicked off on Monday with Green Eggs & Ham. Students stopped by TJ, Rayl and the Havener Center to learn about Chartwells Sustainability Programs and our cage free egg purchasing policies.
On Tuesday, Chartwells featured a Farmer's Market, where we showcase the local farms we purchase from. Over 200 students stopped by asking questions and purchasing produce.
On Wednesday, TJ and Rayl Dining Halls hosted dinner featuring local produce. The menu was Roasted Eggplant, Corn on the Cobb, Acorn Squash, and Garlic Penne Pasta with local Zucchini, Tomatoes and Yellow Squash.
Thursday was an exciting day, as Executive Chef John Kircher, displayed his cooking talents and techniques at the front of the Havener Center Food Court. With over 20 different ingredients including 7 local, he created dishes that students could use at their homes. Chef John made dishes from fruit salsas to chicken stir fry. Hundreds of students stopped by to sample his flair and learn why using local is good for the community, and good for them.
